पालक ब्रेड "पकोडी"
My first recipe on this blog :-)Disclaimer: This is not a recipe for a pakodi at all. No besan aata involved and no frying (huh?). Please don't go away.. read on :-) I had to think of a name for this item and pakodi fit better than subji. It is going to be a simple and quick recipe I promise.
When's the best time to make this:
You have bread at home that you're unable to finish.
What do you need:
ब्रेड / रोटी : 3-4 bread loaves,
पालक: 3 cups chopped spinach,
प्यास: 1 chopped onion (I prefer red onion),
लाल मिर्च : 1/2 tsp chilli powder (add more if you're the kind that like it hot)
हलदी : 1/2 tsp turmeric
जीरा : 1/2 tsp cumin
धनिया : 1 tsp coriander/cilantro powder
तेल : 1 tbsp oil

15 mins
How to do it:
The procedure starts with the holy grail of Indian recipes -- heat the oil in a pan/kadahi and stir in the cumin. After it pops, add onion and let it brown a bit. Add the coriander powder, chilli powder, turmeric and mix. Then add the spinach and salt and mix. Let this cook on medium flame for about 5 mins, covered with a lid on top. Stir a couple of times in between to prevent burning.
Meanwhile, make the bread loves into small pieces (as big as croutons). I do it with my hand as it's faster. Once the spinach is cooked, add the bread pieces and mix well. Cook with the lid closed for 2 mins to allow the flavors to enter the bread.
Cook further for 3-4 mins -- if you want the bread to be crunchy, cook on a high flame with the lid open and stir every now and then. Otherwise, cook on a medium flame.
Garnish with chopped green coriander if you wish.
